Study of the hygienic sanitary conditions in the supply centers of the district of Sicuani - Cusco 2020

Abstract

Within the food chain, an important link is the distribution of food to consumers.This activity is carried out in warehouses, shopping centers and especially in supply centers, for which it is necessary to know the hygienic conditions of supply centers. With this premise, the objective of the study is to know the hygienic and sanitary conditions of the supply centers of the Sicuani district in the department of Cusco in 2020. The methodology used is the technique of observation in the positions inside the supply centers and the instrument used is the one issued by the Ministry of Health according to the RM 282-2003-SA / DM health regulations for the operation of food markets. With the conclusion that the meat and offal areas of slaughter animals, fish and shellfish, fruits and vegetables, processed foods, packaged and in bulk, prepared meals, juices and soft drinks in the Central market has a rating of regular and in the market La Bombonera have a qualification of regulating the areas for meat and giblets of slaughter animals, fish and shellfish, processed, packaged and bulk foods, prepared meals, juices and soft drinks with the exception of fruits and vegetables that has a qualification of not acceptable.
